Baked Mac and Cheese with Veggies

Creamy baked pasta with a hidden vegetable sauce; a comfort-food classic made more nourishing.

Ingredients:

• 2 cups Pasta: Boiled

• 1 cup Mixed vegetables: Steamed and pureed

• 1 cup Milk

• ¾ cup Grated cheese

• 1 tbsp Butter

• 1 tbsp Flour

• Pinch Salt and pepper

Recipe:

1. Preheat the oven to 190°C and grease a baking dish.

2. Melt butter, stir in flour, then whisk in milk to a smooth sauce.

3. Add the vegetable puree and most of the cheese; season.

4. Mix in the boiled pasta and transfer to the dish.

5. Top with the remaining cheese.

6. Bake for 18 to 20 minutes until bubbling and golden.

💡 Tip: Pureeing the vegetables into the cheese sauce means even the fussiest eater never picks them out.
