Classic Sweet Lassi

The traditional cooling curd drink, lightly sweetened and frothy; gentle on the stomach in summer heat.

Ingredients:

• 1 cup Fresh curd

• ¼ cup Cold water or milk

• 1 tsp Jaggery powder

• Pinch Cardamom

• Few drops Rose water: Optional

Recipe:

1. Whisk curd with water or milk until smooth and frothy.

2. Add jaggery and cardamom and whisk again.

3. Add a few drops of rose water if using.

4. Pour over a little crushed ice and serve.

💡 Tip: Whisk well to build froth, which children love. Keep it freshly made and lightly chilled, not icy cold.
