Mango Coconut Chia Pudding

A make-ahead chilled pudding of chia, coconut milk and mango; cooling, fibre-rich and naturally sweet.

Ingredients:

• 3 tbsp Chia seeds

• 1 cup Coconut milk or milk

• 1 ripe Mango: Pureed

• 1 tsp Jaggery or honey: Honey only after 1 year

Recipe:

1. Mix chia seeds into the milk and stir well to avoid clumps.

2. Refrigerate for at least 2 hours until it sets like pudding.

3. Top with the fresh mango puree.

4. Serve chilled.

💡 Tip: Stir the chia again after 10 minutes so it sets evenly without lumps. It keeps in the fridge for two days.
