
• 2 Eggs: Beaten
• ¼ cup Onion: Chopped
• ¼ cup Tomato: Chopped
• 1 tsp Oil
• Pinch Salt, turmeric, mild spice
• 1 tbsp Coriander: Chopped
1. Heat oil and sauté onion until soft.
2. Add tomato, salt, turmeric and spice; cook 2 minutes.
3. Pour in beaten eggs and scramble on low until just set.
4. Garnish with coriander and serve with toast.
💡 Tip: Cook the eggs on low heat and pull them off while still glossy so they stay soft, not rubbery.
