Peanut Jaggery Ladoo

A protein-rich two-ingredient ladoo with roasted peanuts and jaggery; warming and energising for mornings.

Ingredients:

• 1 cup Peanuts: Roasted and skinned

• ½ cup Jaggery: Grated

• 1 tsp Ghee

• Pinch Cardamom

Recipe:

1. Coarsely grind the roasted peanuts.

2. Melt jaggery with a little water to a thick syrup.

3. Mix in the peanuts, ghee and cardamom off the heat.

4. Cool slightly until you can handle the mix.

5. Roll into small firm ladoos.

6. Store airtight once fully cool.

💡 Tip: Skin the peanuts after roasting by rubbing them in a cloth; the skins can make the ladoo bitter.
