Spinach Cheese Muffins

Savoury wholewheat muffins flecked with spinach and cheese; a green vegetable kids actually finish.

Ingredients:

• 1 cup Whole wheat flour

• ½ cup Spinach: Blanched and chopped fine

• ½ cup Grated cheese

• ½ cup Milk

• 2 tbsp Oil

• ½ tsp Baking powder

• Pinch Salt

Recipe:

1. Preheat the oven to 180°C and grease a muffin tray.

2. Mix milk, oil and chopped spinach.

3. Fold in flour, cheese, baking powder and salt.

4. Spoon into muffin cups.

5. Bake for 20 to 22 minutes until golden and set.

6. Cool slightly and serve warm.

💡 Tip: Blanching the spinach first removes bitterness and keeps the muffins a bright, appealing green.
