Stuffed Vegetable Quesadilla

A cheesy folded tortilla packed with vegetables; familiar comfort food with a nutritious twist.

Ingredients:

• 2 Whole wheat tortillas

• ½ cup Grated cheese

• ½ cup Sautéed vegetables

• Pinch Salt and oregano

• ½ tsp Butter

Recipe:

1. Sauté vegetables with a pinch of salt and oregano.

2. Place cheese and vegetables on one tortilla and cover with the second.

3. Toast on a buttered pan until golden and the cheese melts.

4. Cut into wedges and serve.

💡 Tip: Let it rest a minute before cutting so the cheese sets and the filling stays put.
